Parmesan Crusted Chicken

Hi all! Welcome back to my blog, Good Eats With Tip.

If you saw my last video and recipe on Parmesan Crusted Fish or even tried it, you must try the Parmesan Crusted Chicken. The recipes are very similar. The difference is that I did not use lemon, but now that I think about it, it may actually be good with lemon 🍋 😋.

Parmesan Crusted Chicken is a go to for my son and I when we are craving something different. I enjoy the Parmesan Crusted Chicken from Longhorn Steakhouse and Hellman’s Mayonnaise also has a recipe that I also enjoy. I took different recipes and added some seasoning and some love 🥰.

This is a simple recipe that I am sure you and your family will enjoy! Thanks for your support

PREP/COOKING TIME: 45 minutes

SERVING SIZE: 2

INGREDIENTS/GROCERY LIST LINKS:

4 skinless boneless chicken breast
Avocado oil
1/2 cup of freshly shredded parmesan cheese
2 tbsp of room temperature butter (I prefer Land O Lakes Butter)
Fresh chopped parsley (just enough for garnish)
Seasonings: kosher saltblack pepper, and garlic powder

DIRECTIONS

1. Start out by washing your chicken and pat dry (be sure to wash your hands and sanitize your area afterwards).
2. In a small bowl, add the 2 tbsp of butter, 4 tbsp of mayo, and 1/4 cup of shredded parmesan cheese. You may also add salt and pepper to taste and mix well and put to the side.
3. In a separate bowl, add 3/4 cup of Italian bread crumbs and 1/4 cup shredded parmesan cheese. Add salt and pepper to taste and mix well.
4. Add avocado oil to a hot skillet then add the chicken.
6. Sprinkle kosher salt, pepper, and garlic powder on both sides of your chicken. Cook on both sides until it is almost done.
7. Next, add the chicken to a non-stick pan and spread your mayo mixture on top of each piece of chicken (you may coat the sides also if you like), then take your bread crumb mixture and add it on top of your mayo mixture then press in with your fingers.
8. Add chicken to preheated oven (425 degrees) and cook for 10 to 15 minutes, depending on the thickness of your chicken.
9. Once it is done garnish with fresh parsley and cheese (optional).
10. Pair with your favorite sides and it is time to dig in. Enjoy! 😉

Sweet Potato Cornbread Muffins

Hey Guys!  I know, I know, it has been quite some time since I last posted. I was going back and forth, deciding if I wanted to continue Good Eats With Tip or add my cooking videos to my other channel All Things With Tip. The Good Eats With Tip Channel was not doing as well as I hoped, so I decided to add my videos to All Things With Tip. Maybe I will decide to switch again later, but who knows. I will allow God to lead me. For this recipe, I decided to make Sweet Potato Cornbread Muffins. I have been seeing others with their own recipes and decided to try it for myself. I decided to keep it simple and use Jiffy Cornbread as the base and then added the ingredients that I though would pair best. I was not planning to make a desert, so I did not want it too sweet. My goal was to still be able to taste the cornbread, but enhance the flavor of the sweet potato. See the recipe and video below.
