Stuffed Salmon with Cajun Alfredo Pasta

 INGREDIENTS 

1lb of Salmon

Spinach

8oz 4 Cheese Shredded Cheese (Asiago, Fontina, Parmesan, Provolone)

Creole Seasoning

Garlic Powder

Salt 

Pepper

Cajun Seasoning

8oz Cream Cheese Softened (half for filling and half for sauce)

Cooked Noodles (your choice)

Avocado Oil 

Butter

24oz heavy whipping cream

1tsp Minced Garlic

DIRECTIONS

1.  Start with clean salmon and cut in half for two pieces or you can keep it whole if you choose to. Slice in the middle for the filling.


2.   Spray with avocado oil and season all sides to your liking with creole, garlic powder, salt, pepper, and cajun seasoning. Set a aside to start preparing your filling.


3.  In a bowl mix spinach (I used a hand full. I recommend adding a little at a time.), 4 cheese (I used a little less than half of the container, 1-1.5 oz) and softened cream cheese. Mix well and stuff salmon


4. In a separate pan, melt a tbsp of butter sear salmon on both sides (do not cook thoroughly), then add to a pan to continue cooking in the oven on 430 degrees for 30 minutes.


5.  While your salmon is cooking in the oven, prepare your sauce in the same pan that you seared the salmon.


6.  Add a tbsp of butter to the pan. Once the butter is melted add minced garlic. Once the garlic has began to cook, slowly add in your heavy whipping cream and cheese. Alternate until you have used the remainder or until you have reached your desired consistency. Continue to whisk as you are adding your ingredients.


7.  Once your sauce is done, your salmon should be almost done as well. It's time to plate and eat!
