I know, I know, it has been quite some time since I last posted. I was going back and forth, deciding if I wanted to continue Good Eats With Tip or add my cooking videos to my other channel All Things With Tip. The Good Eats With Tip Channel was not doing as well as I hoped, so I decided to add my videos to All Things With Tip. Maybe I will decide to switch again later, but who knows. I will allow God to lead me.
For this recipe, I decided to make Sweet Potato Cornbread Muffins. I have been seeing others with their own recipes and decided to try it for myself. I decided to keep it simple and use Jiffy Cornbread as the base and then added the ingredients that I though would pair best. I was not planning to make a desert, so I did not want it too sweet. My goal was to still be able to taste the cornbread, but enhance the flavor of the sweet potato. See the recipe and video below.
INGREDIENTS / SHOPPING LINKS
Jiffy Cornbread Mix (1 box)
Milk (1/3 cup)
Butter (1 tbsp, melted)
Sweet Potato (small to medium)
Egg (1)
Light Brown Sugar (4 tsp)
Nutmeg (1/2 tsp)
Cinnamon (1/2 tsp)
Pecans (optional, but a must for me)
Honey Cinnamon Butter
Butter (2 tbsp)
Honey (1tsp)
Cinnamon (1/4 tsp)
Makes 6 - 8 Large Muffins
DIRECTIONS
1. Boil or bake (preferred) 1 sweet potato until completely done. Once done, mash the potato very well (I found the mixer to be very helpful).
2. In a separate mixing bowl, mix the Jiffy Cornbread Mix, butter, milk, egg, light brown sugar, nutmeg and cinnamon. Once this is mixed well add the sweet potatoes and pecans. Pecans are optional and some may be allergic. Personally, I enjoyed them even more with the pecans.
3. Add the mixture to the muffin cups and bake on 400 for 15 to 20 minutes.
4. For the honey butter, mix butter (mine was room temperature), honey and cinnamon.
5. Once the muffins are done, serve with the honey cinnamon butter.
