Easy, Tasty Parmesan Crusted Cod Fish

Hi all, I pray that your week is off to a great start! Today’s recipe is for a tasty Parmesan Crusted Cod Fish. I paired this with roasted asparagus and homemade mashed potatoes. I am always seeking to try something new. I have made parmesan crusted chicken before and it is always DELICIOUS. I have tied parmesan crusted fish before but it was just ok. Let me tell you, this time it was amazing. 
Cod is a thicker white fish. I have noticed each time I cook it that it requires a little more seasoning than what I usually use when I cook flounder. I did just that and added more seasoning. I also did something different this time and added fresh lemon juice to the fish and mixture, along with a little lemon zest. I put so much love into this dish and it came out in the flavor. PREP/COOKING TIME: 45 minutes

SERVING SIZE: 3-4

INGREDIENTS/GROCERY LIST LINKS:

32 oz of Wild Caught Boneless & Skinless Pacific Cod (Can be frozen or fresh, 5-6 pieces)
Avocado oil
1 fresh lemon
1/2 cup of freshly shredded parmesan cheese
2 tbsp of room temperature butter (I prefer Land O Lakes Butter)
Fresh chopped parsley (just enough for garnish)
Seasonings: kosher salt, black pepper, and garlic powder

DIRECTIONS

1. Start out by washing your fish and pat dry (be sure to wash your hands and sanitize your area afterwards).
2. In a small bowl, add the 2 tbsp of butter, 4tbsp of mayo, tsp of fresh lemon juice, and 1/4 cup of shredded parmesan cheese. You may also add salt and pepper to taste and mix well and put to the side.
3. In a separate bowl, add 3/4 cup of Italian bread crumbs, 1/4 cup shredded parmesan cheese, and a pinch of lemon zest. You may add a little bit of salt and pepper to taste and mix well.
4. Add avocado oil to your pan, then add the fish.
6. Sprinkle kosher salt, pepper, and garlic powder on top of your fish, then squeeze lemon juice over the top.
7. Next, spread your mayo mixture on top of each piece of fish (you may coat the sides also if you like), then take your bread crumb mixture and add it on top of your mayo mixture then press in with your fingers. I added a little bit of avocado oil to the top of each piece of fish. This is optional.
8. Add fish to preheated oven (425 degrees) and cook for 15 to 20 minutes. Most of my fish was thick so if your fish is thinner cook for 10-12 minutes or until flaky. Next broil until the crust is golden brown. MAKE SURE YOU WATCH IT!
9. Once it is done garnish with fresh parsley and fresh squeezed lemon juice.
10. Pair with your favorite sides and it is time to dig in. Enjoy! 😉
