Today I wanted to share my video and recipe for my greens that I cook with smoked applewood bacon. I usually don’t cook my greens with meat, because I am usually able to get the flavor I need without it, but I did try them with bacon before and really enjoyed it. Now I am sharing with you.

PREP/COOKING TIME: 1.5 - 2 hours
SERVING SIZE: 4
INGREDIENTS/GROCERY LIST LINKS:
16 oz bag of mixed greens (collards, turnips and mustard greens) washed and drained.
Smithfield Smoked Applewood bacon ( I used 5 pieces and cut the bacon into pieces once it was cooked)
1 green bell pepper cut in half
14.5 oz can of Swanson Chicken Broth
Seasonings: kosher salt, red cayenne pepper, garlic powder, onion powder and creole seasoning.
DIRECTIONS

1. Start by making sure your greens have been washed and drained. Set them to the side while your bacon is cooking in the oven or in the skillet.
2. Next remove the bacon from the skillet but leave the grease. If you cooked your bacon in the oven, pour the grease into your skillet or pot. And set the bacon to the side until you are ready to add it.
3. Add your greens to your skillet or pot and toss them in the bacon grease to be sure they are fully coated. As the greens are cooking down, add all seasonings. REMEMBER TO SEASON LIGHTLY. You do not want your greens to be too salty. As they cook down you will begin to tase the flavor more and more.
4. Add your green bell pepper, chicken broth and bacon pieces.
5. Cover and allow your greens to cook down until they are at your desired texture. I like to cook my greens on medium and then turn down to low when the broth is almost cooked out. I also like to toss them throughout the time they cook. You can always add a little water to the pan and continue cooking if you desire softer texture greens.
