Creamy Blackened Fettuccine Chicken Alfredo With Seasoned Broccoli

Welcome back to Good Eats with Tip! Today’s recipe is a Creamy Blackened Chicken Alfredo with a side  of seasoned broccoli. This was actually a quick meal. My son wanted something different, but he also wanted chicken. It has been a while since I cooked Alfredo, so I figured we would cook some up and do it with blackened flavor. Even though I made this for my son, I had to have a taste also. It was delicious, creamy and flavorful. Be sure to try and let me know how it turns out. PREP/COOKING TIME: 1 hour

SERVING SIZE: 1-2

INGREDIENTS:

Fettuccine Noodles
1 cleansed boneless chicken breast cut in half (so that chicken won’t be so thick)
Small head of broccoli

Sauce
1 tsp butter
1 tsp cornstarch
2 cups of heavy whipping cream
4 oz of freshly shredded parmesan cheese
2 1/2 oz of freshly shredded asiago cheese
1/2 tsp blackened seasoning
Salt and pepper to taste

DIRECTIONS

1. Cook fettuccine noodles according to package instructions.
2. Add butter to pan and melt on medium heat.
3. Add cornstarch and mix.
4. Slowly add in heavy whipping cream and whisk together until smooth.
5. Add Parmesan and Asiago cheese slowly and whisk until smooth.
6. Add seasonings to sauce and mix well. Allow to simmer while finishing up.
7. In a separate pan add chicken and season on both sides with salt, pepper, blackened seasoning and a                      pinch of red pepper.
8. Cook chicken on medium to medium high on both sides (depending on your stove) until done.
9. Remove chicken from pan and add butter/oil (optional) to the pan then add broccoli and lightly season (optional) with the same seasonings as your chicken. I like to lightly cook my veggies just enough to chew.
10. After your broccoli is done, mix your noodles in your sauce, plate and it’s time to eat.

Sweet Potato Cornbread Muffins

Hey Guys!  I know, I know, it has been quite some time since I last posted. I was going back and forth, deciding if I wanted to continue Good Eats With Tip or add my cooking videos to my other channel All Things With Tip. The Good Eats With Tip Channel was not doing as well as I hoped, so I decided to add my videos to All Things With Tip. Maybe I will decide to switch again later, but who knows. I will allow God to lead me. For this recipe, I decided to make Sweet Potato Cornbread Muffins. I have been seeing others with their own recipes and decided to try it for myself. I decided to keep it simple and use Jiffy Cornbread as the base and then added the ingredients that I though would pair best. I was not planning to make a desert, so I did not want it too sweet. My goal was to still be able to taste the cornbread, but enhance the flavor of the sweet potato. See the recipe and video below.
