Taco Bake Casserole






Welcome back to Good Eats with Tip! I hope that your week has been great. Today’s recipe is Taco Bake Casserole 😋. 


While at work my son and I were texting back and forth trying to figure out what we wanted for dinner. We always want something different, but it always seems like there is just not enough time to cook after work at times. My son says I want a salad He’s the only kid I know that will eat a salad everyday lol. I’m thinking I don’t know if I want salad but we do need vegetables, so I start thinking, maybe we could do a taco salad, but we always do that. Then, I thought let’s throw everything in there together and bake it. So that’s how we came up with today’s meal. This meal allows us to have plenty of veggies and protein. PREP/COOKING TIME: 1 hour


SERVING SIZE: 4


INGREDIENTS:


1 tbsp avocado oil 

1 lb ground beef

1 small white onion chopped

1/2 green pepper chopped

1 tbsp garlic powder

1 tbsp onion powder

1 1/2 tsp kosher salt

1 tsp black cracked pepper

1 tsp hot taco seasoning

2 tbsp regular taco seasoning 

10 oz can of original rotel

15 oz can black beans

15 oz whole corn (we only used half)

1 tsp of chopped cilantro

1 bag of Tortilla chips

4 cups Mexican cheese (2 bags)

Toppings

Shredded lettuce

Sour cream 

Chopped green onions


DIRECTIONS 


1. Add avocado oil to pan on medium heat

2. Once the oil is hot add onions and peppers and sauté 

3. Add hamburger meat and brown 





4. Add garlic powder, onion powder, kosher salt, black pepper, hot and regular taco seasonings, rotel black beans, corn, and cilantro. Mix well.




5. Add a layer of tortilla chips to baking dish, then meat mixture.



6. Add cheese.

7. Repeat 5 and 6.




8. Bake on 425 degrees for 20-30 minutes (or until cheese is melted to your liking)

9. Add your toppings and dinner is served.

Stuffed Salmon with Cajun Alfredo Pasta

  INGREDIENTS  1lb of Salmon Spinach 8oz 4 Cheese Shredded Cheese (Asiago, Fontina, Parmesan, Provolone) Creole Seasoning Garlic Powder Salt  Pepper Cajun Seasoning 8oz Cream Cheese Softened (half for filling and half for sauce) Cooked Noodles (your choice) Avocado Oil  Butter 24oz heavy whipping cream 1tsp Minced Garlic LINK TO VIDEO DIRECTIONS 1.  Start with clean salmon and cut in half for two pieces or you can keep it whole if you choose to.
